Fondant potatoes are simple to make yet look elegant. With their creamy interior and crunchy exterior, you’ll love how this recipe transforms ordinary spuds into the star of your table.

While this is one side dish deserving of a classy entrée and a special occasion, it is actually quite easy to make. Consider making savory fondant potatoes when you are planning to serve a whole chicken, a glazed ham roast, or a filet mignon.

What Are Fondant Potatoes?

Fondant potatoes originated in French cuisine. In this cooking method, potatoes are prepared by first peeling and cutting off both ends so they’ll stand up flat. The flat sides are then seared and browned in oil until crisp.

The browned potatoes are stood on end and oven-baked in a pool of chicken broth and butter until tender on the outside and still crunchy on the tops. A little seasoning is all it takes to produce a richly flavored side dish that your family (and guests) will love.

The Best Potatoes To Use

The hands-down favorite potato for the fondant treatment is good ol’ russets. They have the right shape and crisp up nicely on the outside while retaining a soft and fluffy interior.

Sweet potatoes can also be prepared this way but will turn out a little softer. Truly you can use any potatoes, the texture will just be a little bit different.

What to serve with fondant potatoes?

Serve them with any main you like! But they go particularly well with dishes with a similar flavor profile. Try it with my Garlic Butter Swai Fish, Rosemary Chicken, and Grilled Steak, or Pot Roast!

What to do with leftovers?

I love mixing leftovers to make other side dishes. Their texture is ideal for hash browns, or just fry them and sprinkle with fajita seasoning or taco seasoning. I also love using them in chicken pot pies!

Storage tips:

They can last in the fridge for up to four days. Just store leftovers in an airtight container. To heat up, I recommend a splash of broth and some butter when you warm them up to keep them nice and moist.

4 large russet potatoes
1 tbsp. vegetable oil
2 tbsp. butter, cut into cubes
1 garlic clove, thinly sliced
3 sprigs rosemary
Kosher salt
Freshly ground black pepper
1 c. low-sodium chicken broth
1 tsp. Chopped rosemary, for serving


  1. Preheat oven to 450° F.
  2. Peel potatoes and slice them into 2 inch thick slices. Season generously with salt and pepper.
  3. In a large skillet over medium-high heat, heat vegetable oil until hot. Add potatoes flat side down into oil and cook until golden, about 5 minutes. When golden, flip potatoes and add butter, garlic, and rosemary. Let another side of potatoes get golden, 5 more minutes. Add chicken stock to the skillet and place in the oven. Bake until tender, 25-30 minutes.
  4. Top with rosemary and serve.

Do you eat fondant or peel it off?

Although the icing is edible, you might see people take the fondant off cakes when they are eating cake because people tend to not like the texture or flavor of fondant. Don’t be shy to eat the icing!

Is it better to bake or boil potatoes?
