Best Homemade Buckeye Recipe 2021

This Buckeye Recipe is the star of every cookie plate alongside my fave Shortbread Cookies and Gingerbread Cookies! While this is one of our favorite Christmas Cookie Recipes, we actually make them all year long!

Buckeyes are a delicious no-bake peanut butter ball dipped in chocolate. If you like Peanut Butter Cups, you’ll love these easy treats!

What is a Buckeye?

As a food, a Buckeye is an easy, no-bake dessert! Buckeye candy is made up of rich and creamy peanut butter balls dipped in chocolate. And it doesn’t matter if you prefer creamy or crunchy peanut butter, any variety will do!

If you’re adding these to your Christmas cookie collection, try dipping them in white chocolate and then decorate with red and green sprinkles and watch them disappear before your eyes!

Why Are They Called Buckeye Balls?

These chocolate-coated rounds of sweetened peanut butter look nearly identical to the nut from a buckeye tree, a tree native to the midwestern United States and the state tree of Ohio.

This explains why the peanut butter balls are so popular in Ohio and the surrounding states like Indiana, where my partner is from.

The candy looks so much like the nut that, when he was a kid, my partner’s parents would always instruct him, “Now, remember, you can eat these peanut butter ball candies, but don’t eat the actual buckeye nuts on the ground!” To this day, he still remembers that warning and repeats it every time he eats one.

Thie Buckeye recipe makes quite a few balls, so my own warning is to limit yourself to eating just a few of these Buckeye balls at a time.

Otherwise, you may find yourself falling into the same sugar aftershock that I did when I initially discovered my love for these delicious little peanut butter balls!

How Do You Dip Them?

  1. Chill the balls and insert a toothpick or wooden skewer about 3/4 the way in.
  2. Dip into the cooled chocolate and gently wipe the bottom on the side of the bowl to remove excess chocolate.
  3. Place buckeyes on a sheet of parchment paper and chill.
  4. Twist toothpick or skewer to remove from ball and use a small knife to smooth the hole over.

The Best Peanut Butter For Buckeyes Recipe

The best peanut butter to use here is one of the standard, mainstream brands like Jif, Skippy, or Peter Pan. These brands have the added oils you need to keep the peanut butter from separating.

Go for smooth and creamy over crunchy, though using crunchy peanut butter can add some interesting texture to your peanut butter balls.

Avoid natural peanut butters. Peanut butter balls made with natural peanut butter will end up drier and more crumbly.

How long do Buckeyes last?

Make sure your buckeyes stay fresh for as long as possible! The Buckeyes should be stored in an airtight container in the refrigerator to keep them nice and fresh. Stored in this way, they will keep for about 1 month.

Rolling the Peanut Butter Balls

Getting the right texture to the buckeyes is important for easy rolling. Most of the time the Jif recipe ratios are spot on. However at times, you may need to add additional powdered sugar (if the dough is too sticky) or peanut butter (if the dough is too crumbly).

Every type of peanut butter is just a little bit different in oil and sugar content. Depending on the type of peanut butter you use, you may have to adjust the recipe ever so slightly. After you have the peanut butter mixture ready, try rolling a ball.

The batter should not stick to your hands and you should have no problem rolling a ball with a smooth surface. Just remember…if the batter is crumbly, add more peanut butter. If it is too sticky, add powdered sugar.

The next step is dipping the peanut butter balls in chocolate. I like to freeze the peanut butter balls for about 30 minutes so they are easier to dip. While the peanut butter balls are in the freezer, it’s time to melt chocolate!

What Kind of Chocolate is Best for Homemade Candy?

I find that high-quality dark chocolate is best for dipping. Dark chocolate melts more smoothly and more quickly than milk chocolate because it is closer to its natural state.

The milk and sugars added to milk chocolate all have different melting points, which makes melting take a little longer. Because I have family that likes milk chocolate also, I often combine both milk and dark chocolate for dipping buckeyes.

Ghirardelli is often my go-to chocolate. They have melting wafers that are easy to use for homemade candy.

Many people add paraffin wax to their chocolate to thin it out. I find that when using high quality dark chocolate, you don’t have to use paraffin wax. You can also add a teaspoon or two of shortening in order to thin the chocolate if absolutely necessary. I highly recommend pure chocolate, though!

BUCKEYE EASY RECIPE:

INGREDIENTS

1 ½ cups peanut butter
1 cup butter, softened
½ teaspoon vanilla extract
6 cups confectioners’ sugar
4 cups semisweet chocolate chips

DIRECTIONS

  1. In a large bowl, mix together the peanut butter, butter, vanilla, and confectioners’ sugar. The dough will look dry. Roll into 1 inch balls and place on a waxed paper-lined cookie sheet.
  2. Press a toothpick into the top of each ball (to be used later as the handle for dipping) and chill in the freezer until firm, about 30 minutes.
  3. Melt chocolate chips in a double boiler or in a bowl set over a pan of barely simmering water. Stir frequently until smooth.
  4. Dip frozen peanut butter balls in chocolate holding onto the toothpick. Leave a small portion of peanut butter showing at the top to make them look like Buckeyes. Put back on the cookie sheet and refrigerate until serving.

What is the Best Way to Melt Chocolate?

Although melting chocolate in the microwave might seem the easiest, a double boiler gives the best results. This is a pan that sits inside another pan. Water simmers in the bottom pan and chocolate melts in the top pan from the heat of the water boiling.

Using a double boiler helps with even melting, allows the chocolate to stay hot, and helps prevent burning. Yes, you can burn the chocolate and it is not pleasant when you do!

Be sure to keep the water in the bottom pot on a low simmer. If the water boils too strongly it could seize up the chocolate. Once the chocolate is mostly melted, take the double boiler off the stove and allow the warmth of the water to keep the chocolate smooth and melted while you are dipping peanut butter balls.

How long can you freeze Buckeyes?

Place the balls on a silicone mat lined baking sheet in the freezer, and freeze until frozen. Then wrap bundles of 6-8 balls together in plastic wrap and place inside a freezer container or ziplock bag. Buckeye balls will keep in the freezer for up to 2 months
