I was unsure of this strawberry vinaigrette recipe in the beginning. Many of the recipes I searched online used balsamic vinegar, and at first it was a bit strong and overpowering.
However, after several tweaks to this recipe, this strawberry vinaigrette balances out to a perfect sweet and savory flavor.

Macerate the Strawberries
Blending the sliced strawberries with the vinegar and honey helps extract the liquid from the berries. This process is called maceration and helps to draw out sweet syrupy juices from the strawberries and infuses the berries with flavor.
The strawberries in this recipe help to bind the ingredients together into a thick, almost creamy consistency that coats the leafy greens rather than trickling off.

1 cup strawberries with tops cut off
2 tbsp apple cider vinegar
2 tbsp olive oil
1/4 tsp salt
1/4 tsp pepper
- Make dressing by blending all the ingredients in a blender or food processor.
- Refrigerate dressing until ready to serve. Add dressing to salad right before serving.
How do you dress up strawberries?
Mix a small amount of light brown sugar into several tablespoons of sour cream. My proportions are 1 teaspoon of light brown sugar to 3 tablespoons of sour cream. If you prefer a sweeter mixture, add a bit more sugar. Dip the small end of a strawberry into the mixture.

This strawberry salad dressing has several uses that work well:
- It is the classic dressing choice for a strawberry and spinach salad (sliced strawberries, spinach, red onion, nuts, and dairy or Vegan feta cheese) or this strawberry kale salad. It also pairs well with kale and other leafy greens including chard, collards, chicory, etc.
