The Sweet Potato is a dicotyledonous plant that belongs to the bindweed or morning glory family, Convolvulaceae. Its large, starchy, sweet-tasting, tuberous roots are a root vegetable.

The young leaves and shoots are sometimes eaten as greens. The sweet potato is not closely related to the common potato (Solanum tuberosum).

The sweet potato, especially the orange variety, is often called a “yam” in parts of North America, but it is also entirely unrelated to true yams.

Ipomoea batatas are native to the tropical regions in the Americas. Of the approximately 50 genera and more than 1,000 species of Convolvulaceae, I. batatas are the only crop plant of major importance-some others are used locally (e.g., I. Aquatica “kangkong”), but many are poisonous.

The genus Ipomoea that contains the sweet potato also includes several garden flowers called morning glories, though that term is not usually extended to Ipomoea batatas.

Some cultivars of Ipomoea batatas are grown as ornamental plants under the name tuberous morning glory, used in a horticultural context.

Larger sweet potatoes will take longer – continue to microwave in 1-minute bursts as needed until the potatoes are cooked through.

How to eat microwave sweet potato?

I enjoy it just as it is, warm and tender and flavorful. Sometimes I add a sprinkle of kosher salt. Obviously, you can add a pat of butter. My husband likes to sprinkle his with a little fine-grated parmesan cheese.

I know that many people like a sweet version. I haven’t tried it myself, but you could try a pat of unsalted butter or coconut oil, a sprinkle of cinnamon, and perhaps a drizzle of honey or maple syrup.

What to serve with this dish?

Anything! It’s such a wonderfully versatile side dish. It goes with so many main courses. And since it’s so easy to prepare, it frees you up to cook anything you like, even complex dishes.

I often serve microwave sweet potato with baked chicken breast, as a side to reverse seared steak, or with baked pork chops. It’s also excellent with a couple of fried eggs for a tasty and filling meatless dinner.

  1. Wash the sweet potato thoroughly, pat dry, and pierce 3-4 times with a fork. Place potato on a microwave-safe plate and microwave 5 minutes, turning halfway through. 
  2. If your potato isn’t forked tender after 5 minutes, continue microwaving in 30-second increments. Split potato down the middle, season with salt and pepper, and top with a pat of butter.

Microwaved sweet potatoes have tender flesh and soft skins. If you want the crisp skin of an oven-baked sweet potato, slide the cooked potatoes under the broiler until the skin is dry and crisp.

What’s the Best Way to Store a Microwave Sweet Potato?

Microwaved sweet potatoes are a great food for meal prep – they can be topped with apples and nut butter for breakfast, pureéd into soup, or stuffed with spicy Buffalo chicken for a super-fast dinner.

To store them, place them in an airtight container for up to 3 days. To reheat them, place them directly on the oven rack in a 325°F oven until warmed through, or microwave until warm.

Is it bad to cook a sweet potato in the microwave?

It’s really the best way. Microwaving sweet potatoes cuts down cook time by 45-55 minutes, and helps maintain nutritional value. Baking a sweet potato in the microwave preserves far more nutrients (folate, vitamins A and C) than boiling it, for example.
