Frito pie is a dish popular in the Midwestern and Southwestern United States, whose basic ingredients are chili, cheese, and corn chips (traditionally Fritos).

Frito pie can be prepared in a casserole dish, but an alternate preparation can be in a single-serve Fritos-type corn chip bag with various ingredients as toppings. In Mexico, a similar type of dish is chilaquiles.

Originally created in Mexico but popularized in the American Southwest, Frito Pies are comfort food perfection.

Picture this: a freshly opened bag of Fritos smothered in spicy beef chili, cheddar cheese, and some bright, crunchy onions and jalapeños. Best eaten directly out of the bag.

How to make Frito Pie with ground beef?

First, brown ground beef, onion, and garlic in a skillet. Drain the meat mixture and return to the skillet. Then add:

  • Chili powder
  • A large can of chili beans
  • A can of diced tomatoes

Drain off some of the excess liquid from the top of the beans, so that it looks like the photo below when you’re done. You don’t want to drain off all of the liquid from the can because you want some of that left to moisten and flavor your chili!

Transfer the beef mixture to a large baking dish, and top with grated cheese and Fritos.

Bake the casserole in a 350 degree F oven for about 15-20 minutes, or just until the casserole is bubbly and the cheese is melted.

INGREDIENTS

FOR CHILI:
1 tbsp. extra-virgin olive oil
1 medium white onion, chopped and divided
3 cloves garlic, minced
2 tbsp. tomato paste
1 lb. ground beef
1 1/2 tbsp. chili powder
1 tsp. ground cumin
1 tsp. dried oregano
1/4 tsp. cayenne pepper
Kosher salt
Freshly ground black pepper
1 (28-oz.) can crushed tomatoes
1 (15-oz.) can pinto beans, drained and rinsed
1 (4-oz.) can green chili
FOR SERVING:
6 (1-oz) bags Fritos
1 jalapeño, thinly sliced
2 c. shredded Cheddar
Sour cream, for serving (optional)

DIRECTIONS

  1. In a large pot over medium heat, heat oil. Add half onion and cook until soft, about 5 minutes. Stir in garlic and cook until fragrant, about 1 minute more, then add tomato paste, stirring to combine. Add ground beef and cook until no longer pink. Drain fat and return to heat.
  2. Add chili powder, cumin, oregano, cayenne, and season generously with salt and pepper. Pour in crushed tomatoes, pinto beans, and green chili and bring chili to a boil. Reduce heat and simmer 20 minutes. Season with more salt and pepper, if necessary.
  3. Build Frito pie: open bag(s) and ladle in chili. Top with cheddar, remaining chopped white onions, jalapeños, and sour cream if using. 

Can you freeze Frito Pie? 

Yes! This is a great freezer meal option to make ahead of time. I suggest preparing the meat mixture and placing it in a casserole dish, topping with cheese, and then covering tightly. Freeze for up to 1 month.

When ready to bake, thaw the casserole in the refrigerator overnight. Allow the dish to sit on the counter for about 30 minutes before baking so that it has time to come to room temperature. Top with Fritos just before baking, and then bake according to the recipe instructions.
