Easy Keto Meatloaf Recipe

Meatloaf is a dish of ground meat that has been combined with other ingredients and formed into the shape of a loaf, then baked or smoked. The final shape is either hand-formed on a baking tray or pan-formed by cooking it in a loaf pan.

It is usually made with ground beef, although ground lamb, pork, veal, venison, poultry, and seafood are also used, sometimes in combination. Vegetarian adaptations may use imitation meat or pulses.

The cooked loaf can be sliced like a loaf of bread to make individual portions.

It is made by adding bread crumbs and egg and because the dish can become dry, various techniques exist to keep the dish moist, like covering it with sauce, or wrapping it, or using moisture-enhancing ingredients in the mixture, filling it with fatty meats, rich cheeses, or vegetables.

Choose a Keto Breadcrumbs Replacement

You have some options here and only a couple of them are good ones. The list of breadcrumb substitutions for keto meatloaf usually includes almond flour, coconut flour, hemp hearts, ground flaxseed and maybe even removing the bread crumbs altogether.

Don’t make this mistake! Meatloaf needs breadcrumb replacements or it will come out tough, dry, and dense.

Tips For The Best Low CARB MEATLOAF

To make sure your low carb meatloaf is just perfect, here are a few tips to keep in mind…

Just a quick word of warning – keto low carb meatloaf is very tender. It can be a little challenging to cut, so make sure to let it rest for 10 minutes before slicing. Cut carefully using a sharp serrated bread knife, not a chef’s knife.

Don’t Over Work The MEAT:

Avoid overworking the meat when mixing the ingredients, too. Doing so can make the loaf more prone to falling apart. It may also affect the taste and texture. This pretty much applies to any recipe that uses ground beef.

How to Make Low CARB MEATLOAF Ahead:

You can easily make this keto meatloaf in advance! If you’ll be eating it within a few days, it stores just fine uncooked in the fridge. Cover the surface very tightly with plastic so that the meat doesn’t oxidize. Otherwise, you can freeze it for longer.

Both ways make meal prep on a weeknight a breeze. Even though it takes a while to cook in the oven, the prep is pretty quick.

And, having it ready in advance means you can stick it in the oven while you go do something else. Can’t go wrong with time saving low carb recipes like this!

Not only is this a keto-friendly dinner, but it’s also a much needed revamp. Everyone, including those who are not afraid of carbs, will love this bacon-wrapped Keto Meatloaf recipe.

The bacon makes it insanely flavorful, the almond flour acts as the perfect binder and the soy sauce? It packs a punch of umami you never knew you needed.

Cooking spray
1 tbsp. extra-virgin olive oil
1 medium onion, chopped
1 stalk celery, chopped

1 c. shredded cheddar
1/2 c. almond flour
1/4 c. grated Parmesan
2 eggs
1 tbsp. low-sodium soy sauce
Kosher salt
Freshly ground black pepper
6 thin strips of bacon

  1. Preheat oven to 400°. Grease a medium baking dish with cooking spray. In a medium skillet over medium heat, heat oil. Add onion and celery and cook until soft, 5 minutes. Stir in garlic, oregano, and chili powder and cook until fragrant, 1 minute. Let the mixture cool slightly.
  2. In a large bowl, combine ground beef, vegetable mixture, cheese, almond flour, Parmesan, eggs, soy sauce, and season with salt and pepper. Shape into a large loaf in a baking dish, then lay bacon slices on top.
  3. Cook until bacon is crispy and beef is cooked for about 1 hour. If bacon is cooking too quickly, cover the dish with foil.

This low carb recipe calls for baking, but it’s so versatile that you can make it in your air fryer too!

For an air fryer version of this keto recipe, shape the meatloaf on a tray, then set the air fryer to 380°F. Add some foil to the bottom of the air fryer, then bake.

Make sure to check the progress of your meatloaf on the 20 and 30-minute marks because the cooking time will be less on the air fryer.

If for some reason it starts browning too quickly, just cover it with foil.

Then at the 30-minute mark, cover it with keto ketchup and bake until it reaches an internal temperature of 165°F.

Why does my meatloaf fall apart?

The most common reason is that your meatloaf doesn’t have enough binding agents. To help your meatloaf stay together add things in like eggs and bread crumbs because they are key ingredients that bind meat stick together. Another reason why your meatloaf may be falling apart is that it is overcooked.
